Our Almost-Famous Strawberry Smores

I'll admit, it's a wee bit hard, when the weather is so spectacular, for me to think of writing this blog, let alone come up with exciting new menu items to add to it. It's just too darn nice out to be in the kitchen or at the computer. But one recent evening, as we were roasting marshmallows by the fire at sunset with a bowl of berries beside us, and my kid is belting out "My Name in Lights," inspiration finally struck, like a lightning bug: Let's combine these two delicious summer treats, and make up a whole new Lina-friendly desert (without baking!)
To make one of our Almost-Famous Strawberry Smores, just place the chopped fresh fruit right on top of your melted-chocolate-and-roasted-marshmallow-covered graham cracker. Then complete the desert sandwich with another chocolate-covered cookie and Ta-da! You're mouth will feel the whole joy of the summer season in just one juicy, crunchy, sticky, chocolaty, gooey bite. (Not that you should stop at one bite. Nor at one Smore.)
I recommend serving this with freshly brewed hot or iced mint tea, Moroccan style. To brew, simply boil water and fill your tea glasses half way with washed and torn fresh mint, which grows in abundance all summer long. Let steep at least 5 minutes or until tea water has turned to a beautiful bright green before serving. (Just the time you need to assemble a smore or two.)

    I'm Lorraine Allen, and when our daughter was diagnosed with multiple severe food allergies in infancy, a decade ago, I decided to freelance from home so that I could also care and cook for her. Because I grew up all around the world, it's important to me that she be able to enjoy all sorts of international food.  I've learned, throughout this process, that even a large number of severe allergies and restrictions does not stop a person from eating well. On the contrary, by forcing us to focus so much attention on what we consume, we've gained a whole new appreciation for good food, and ironically, we all enjoy a healthier diet than before this diagnosis.
