Rich , Gooey, Vegan Chocolate-Chocolate-Chip Brownies

Baking perfect, gooey, extra-rich chocolate brownies that are vegan can sound like Mission Impossible -- but it's not. If I can pull this off, believe me, anyone can. Here's my super simple fool-proof recipe that's so rich, no one will believe it lacks eggs or dairy. These brownies are huge crowd-pleasers, kid-pleasers, and maybe best of all, the batter takes just a few minutes to mix up. The baked brownies freeze really well too, so you can double up the recipe and have some handy for a rainy day or a serious chocolate craving any time. (Note: be prepared for a full-on family feud over who gets to lick the batter in the bowl. Even our puppy tries to get a taste!)

Ingredients:

  • 1 3/4 cups all-purpose flour
  • 1 1/2 teaspoons baking soda
  • 1 1/2 teaspoons white vinegar
  • 1/4 cup vegetable oil
  • 1/2 cup corn syrup
  • 1 cup sugar
  • 2/3 cup unsweetened cocoa powder
  • 1/2 cup water
  • 1 teaspoon vanilla extract
  • 3/4 cups chocolate chips

To prepare:

  • Preheat over to 350 degrees F.
  • Sift flower into a large mixing bowl, then add all other ingredients, mixing well to combine.
  • Transfer batter to a greased 8x8 baking pan and bake for about 25 minutes.
  • Cool well, cut and serve or freeze.

    I'm Lorraine Allen, and when our daughter was diagnosed with multiple severe food allergies in infancy, a decade ago, I decided to freelance from home so that I could also care and cook for her. Because I grew up all around the world, it's important to me that she be able to enjoy all sorts of international food.  I've learned, throughout this process, that even a large number of severe allergies and restrictions does not stop a person from eating well.
