Roasted Golden Beets, Heirloom Tomato, Burrata and Basil Salad

People, the frost is gone (pretty much). The snow has melted enough to make me concerned that our plan to go spring skiing this coming weekend might be, despite the awfully cold winter, not the best idea. We'll see. But there's a lot to look forward to, food-wise, this time of year, not the least of which is the happy reappearance (from local greenhouses) of delicious heirloom tomatoes and fresh basil pots we can start growing in our window sills, tentatively, at last again. And what better way to enjoy that welcome sweet taste of warmer days ahead, and the promise of sunshine, than with a delicious, slightly warm, hearty and refreshing salad?  
To prepare, layer warm roasted golden beets, quartered, with fresh tomato wedges and thick slices of soft Burrata cheese. Season well with salt and pepper, drizzle with olive oil, and top with a generous handful of torn fresh basil leaves.
I like to serve this for lunch with hot rolls on the side, followed by a delicious bowl of soup.

To me, there are few better dishes to enjoy
at the start of any meal, or as a light, delicious lunch.

    I'm Lorraine Allen, and when our daughter was diagnosed with multiple severe food allergies in infancy, a decade ago, I decided to freelance from home so that I could also care and cook for her. Because I grew up all around the world, it's important to me that she be able to enjoy all sorts of international food.  I've learned, throughout this process, that even a large number of severe allergies and restrictions does not stop a person from eating well. On the contrary, by forcing us to focus so much attention on what we consume, we've gained a whole new appreciation for good food, and ironically, we all enjoy a healthier diet than before this diagnosis.
