Watermelon and Mint Salad

Summer is flying by too quickly, as usual, and there's nothing I want to do less than spend a beautiful day in the kitchen. Since we still need to keep making most of our food from scratch though, there isn't much choice in the matter-- but thankfully there are plenty of super fast recipes, like this one, which taste better than anything you can find in a box or store, or even, when it comes to this dish, in a fancy restaurant. 
Here is one our all-time favorite summer deserts, and it's so simple, it doesn't even require the usual recipe ingredient and how-to lists. Just slice up a fresh watermelon, in season right now all around, and cut into 1" cubes or large balls. (Both look great and make perfect, juicy bite-sizes). Tear up a handful of fresh mint leaves. Squeeze half a lime all over the watermelon. Toss well, cover, and refrigerate to serve well-chilled as the perfect snack, beach treat, camp lunch desert or end to any summer feast.
​This extra refreshing, delicious desert tastes even better than ice cream on a 95 degree day.

    I'm Lorraine Allen, and when our daughter was diagnosed with multiple severe food allergies in infancy, a decade ago, I decided to freelance from home so that I could also care and cook for her. Because I grew up all around the world, it's important to me that she be able to enjoy all sorts of international food.  I've learned, throughout this process, that even a large number of severe allergies and restrictions does not stop a person from eating well. On the contrary, by forcing us to focus so much attention on what we consume, we've gained a whole new appreciation for good food, and ironically, we all enjoy a healthier diet than before this diagnosis.
